Red Salt is an intimate, premium restaurant located within the luxurious Wave Resort & SPA complex in Międzyzdroje. Designed as a Steakhouse & Winery, the venue offers top-quality cuisine that’s rarely found at the seaside. We were faced with the challenging task of creating an intimate, premium space in a corner unit with a triangular layout, two fully glazed walls, and a total area of 150 square meters.
The intended concept for the venue: Steakhouse & Winery – serving the highest quality products and offering cuisne that is usually unavailable at the seaside. The idea was to design an intimate, cozy venue — a place where one can retreat for an important business meeting or a sophisticated date. A key element in the spatial planning was the aspect of preparing beef in front of the guests. The layout and flow of the space, including the arrangement of tables, were carefully designed to allow the chef to approach each table with a special mobile kitchen — to prepare dishes such as steak tartare or flambé meat right before the guests’ eyes, and serve it on a block of salt.
We began the design process with a thorough analysis of the space itself and a feasibility study of implementing the planned program in this particular location. Next, we aimed to turn the challenge of the unit’s unusual layout into an advantage by developing a functional floor plan that would make the most of its triangular shape. We placed the open kitchen at the far end of the space and gave it a strong — almost theatrical — visual emphasis. As a result, it became a focal point visible from the entrance, drawing guests in, enhancing the sense of depth, and visually completing the space.
We opted for timeless elegance and a color palette reminiscent of the wines and steaks served in the venue. Dominating the space are deep reds shifting into burgundy, noble wooden browns, and golden surfaces and accents that complete the look. To enhance the sense of intimacy in the space, we used partitions made of golden chains. In the area with small booths, they subtly divide the space into sections for 2 to 4 people. The same material, placed along the window panes, creates a light barrier between the interior and the outside world — one that doesn’t fully obstruct the view, but still adds a sense of privacy and seclusion.
All interior elements were designed by us specifically for this venue — from the custom-built fixtures, booths with engraved logos, and tables with carved legs, to the wine fridge enclosure topped with a display shelf reminiscent of old cabinets, libraries, or showcases for precious artifacts. Additionally, there is a “shutter wall” that creates a shifting visual effect depending on the viewing angle — from one side it appears as a wooden wall, while from the other it transforms into a red mirrored surface.
Of course, we couldn’t resist including what we love most in design – the little “treats”:
the name Red Salt (also design by us) is branded onto a block of pink (so-called red) salt at the entrance; the stone pattern on the tables evokes the marbled texture of dry-aged beef; recycled materials and the venue’s only solid wall changes entirely depending on the angle from which it is viewed. Was the floor pattern supposed to evoke subtle associations with cows? Perhaps.
The foundation of the cuisine is simplicity and the quality of ingredients, which is limited to just a few of the very best. At center stage is an exceptional meat — carefully selected Japanese Wagyu beef and premium cuts from around the world. Accompanying it are water, fire, salt, and iron — essential elements of human life that are turned into the core of our philosophy and the basis for the immersive, theatrical dining experience. No salt no love – The venue uses only Maldon salt, seasoned with cherry juice, which makes it truly unique. That is why the Red Salt logo is branded onto a block of pink salt at the entrance.
